A twist on the average taco, Tatsoi balances this clean-eating dish, making it a main dish with no need for extra sides. Nutrient dense, and packed with flavor.
- 1 bunch Tatsoi, chopped
- 1 small onion, diced
- 1 Serrano or Fresno red pepper, finely chopped (remove seeds to reduce heat)
- 2 cloves Garlic, minced
- Corn or flour tortillas
- 1 Tablespoon Olive oil
- Protein of choice: grilled chicken, tofu, or black beans. Taco seasoning of choice to match.
- Sea Salt to taste
- Toppings: Diced tomatoes, sliced avocadoes, and shredded cheese of choice for topping
- Optional: sour cream or Greek yogurt, lime juice, garlic powder
Instructions:
- Sauté over medium low heat peppers, onions, and garlic in olive oil until soft. Set aside.
- Cook protein in same pan with taco seasoning. Add in tatsoi and toss until all are combined, remove from heat.
- Warm tortillas until soft and pliable.
- Assemble tacos: Spoon tatsoi mixture into tortillas, top with cheese and tomatoes, avocado
- Drizzle with lime-garlic cream (Recipe: mix sour cream, lime juice, garlic powder, salt to taste).
- Serve warm with a squeeze of lime and rice (only if you think you need it!)
