Tatsoi Tacos

A twist on the average taco, Tatsoi balances this clean-eating dish, making it a main dish with no need for extra sides. Nutrient dense, and packed with flavor.

  • 1 bunch Tatsoi, chopped
  • 1 small onion, diced
  • 1 Serrano or Fresno red pepper, finely chopped (remove seeds to reduce heat)
  • 2 cloves Garlic, minced
  • Corn or flour tortillas
  • 1 Tablespoon Olive oil
  • Protein of choice: grilled chicken, tofu, or black beans. Taco seasoning of choice to match.
  • Sea Salt to taste
  • Toppings: Diced tomatoes, sliced avocadoes, and shredded cheese of choice for topping
  • Optional: sour cream or Greek yogurt, lime juice, garlic powder

Instructions:

  3. Warm tortillas until soft and pliable.
  4. Assemble tacos: Spoon tatsoi mixture into tortillas, top with cheese and tomatoes, avocado
  5. Drizzle with lime-garlic cream (Recipe: mix sour cream, lime juice, garlic powder, salt to taste).
  6. Serve warm with a squeeze of lime and rice (only if you think you need it!)
