- 1 bunch Swiss chard, stems removed and leaves torn
- 2 ears Sweet Corn
- 1 large onion (sweet or red, your choice!), thinly sliced
- 3 garlic cloves, finely minced
- ½ tsp red pepper flakes
- ½ teaspoon cumin
- ½ cup vegetable broth or water
- Salt and pepper to taste
- Flour or doubled soft corn tortillas to give that “street taco” vibe
- Queso fresco, cheddar, or feta, crumbled
- Roasted tomatillo salsa or or any salsa you like
- Tomatoes, diced
Instructions
- Heat olive oil in a skillet over medium. Sauté onion and corn about 5 minutes.
- Add garlic, cumin, red pepper flakes, and a pinch of salt. Cook 1 minute.
- Add broth and Swiss chard. Cover and simmer 5 minutes until wilted.
- Uncover and cook low/medium until liquid evaporates. Season to taste.
