Simple Corn, Pepper & Onion Sauté

Here’s a vibrant, farm-friendly recipe that puts your corn, tomatoes, green peppers, and onions to delicious use.

Ingredients

  • 2 cups fresh corn kernels
  • 1 cup diced tomatoes (cherry or heirloom work beautifully)
  • 1 green bell pepper, chopped
  • 1 small onion, diced
  • 1 clove crushed garlic
  • 1 teaspoon cumin
  • 1 tbsp butter or avocado oil
  • Salt and pepper to taste
  • 1/2 lime or lime juice
  • Optional: cilantro for top, grated Asiago or feta crumbles

Instructions

  1. In a large skillet, melt butter or heat oil over medium heat.
  2. Add diced onion and sauté until translucent (about 2–3 minutes).
  3. Stir in green pepper and cook for another 2 minutes.
  4. Add garlic, corn and tomatoes, season with salt, pepper, and cumin.
  5. Cook for 5–7 minutes, stirring occasionally, until veggies are tender and lightly caramelized, add in lime juice, then remove from heat.
  6. Serve warm as a side dish or spoon over rice/noodles, serve with grilled meats, or stuffed a large squash. Be adventurous and wrap it in a warm tortilla with some siracha! Yet another option is to toss this all into a salad and top with your favorite dressing.
