Here’s a vibrant, farm-friendly recipe that puts your corn, tomatoes, green peppers, and onions to delicious use.
Ingredients
- 2 cups fresh corn kernels
- 1 cup diced tomatoes (cherry or heirloom work beautifully)
- 1 green bell pepper, chopped
- 1 small onion, diced
- 1 clove crushed garlic
- 1 teaspoon cumin
- 1 tbsp butter or avocado oil
- Salt and pepper to taste
- 1/2 lime or lime juice
- Optional: cilantro for top, grated Asiago or feta crumbles
Instructions
- In a large skillet, melt butter or heat oil over medium heat.
- Add diced onion and sauté until translucent (about 2–3 minutes).
- Stir in green pepper and cook for another 2 minutes.
- Add garlic, corn and tomatoes, season with salt, pepper, and cumin.
- Cook for 5–7 minutes, stirring occasionally, until veggies are tender and lightly caramelized, add in lime juice, then remove from heat.
