Ingredients
- 1½ cups fresh carrots, sliced
- 1½ cups fresh beets, cubed
- 4 tsp olive oil
- 1½ tsp honey or agave
- 1½ tsp ground ginger or two teaspoons fresh ginger
- pinch of cinnamon
- ¾ tsp soy sauce or cocoa aminos
- ½ tsp sea salt
- ½ tsp chili powder (optional for a tiny kick)
Instructions
- Preheat oven to 400°F (200°C).
- Prep veggies: Place carrots and beets on a greased baking sheet.
- Make glaze: Whisk olive oil, honey, ginger, soy sauce, salt, and chili powder.
- Coat & roast: Drizzle glaze over veggies, toss to coat, and roast for 15–20 minutes until crisp-tender.
