Ingredients

  • 1 Delicata Squash
  • 2 tbsp olive oil
  • 2 tbsp maple syrup
  • 2 tbsp brown sugar
  • ¼ tsp ground cinnamon
  • Salt & pepper to taste

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Halve squash lengthwise, scoop out seeds, and slice into ¾-inch half-moons.
  3. In a bowl, whisk olive oil, maple syrup, brown sugar, cinnamon, salt, and pepper.
  4. Toss squash in the mixture until evenly coated.
  5. Spread on a foil-lined sheet pan and roast for 20–30 minutes, flipping halfway, until golden and tender.
  6. Serve warm, optionally garnished with fresh sage or a sprinkle of sea salt. Feeling really fancy? Try hickory salt instead! You can sprinkle and toss shaved fontina or asiago cheese to amplify the nuttiness of this warm-hearted meal.
