Golden Crookneck Squash Fritters

A small skillet of sunshine—these crispy fritters are packed with garden-fresh flavor!

Ingredients

  • 1 medium crookneck squash, grated
  • 1/4 tsp salt
  • Pinch of black pepper
  • 2 tbsp chopped onion
  • 1/2 tbsp chopped fresh basil or parsley
  • 1 egg
  • 2 tbsp flour
  • 2 tbsp cornmeal
  • 2 tbsp grated Parmesan (optional)
  • Olive oil or butter for frying

Instructions

  1. Prep the squash: Grate squash and place in a colander. Sprinkle with salt and let sit for 10 minutes. Squeeze out excess moisture.
  2. Mix the batter: In a bowl, combine squash, pepper, scallions, herbs, egg, flour, cornmeal, and Parmesan.
  3. Fry: Heat oil or butter in a skillet over medium heat. Drop spoonfuls of batter into the pan and flatten slightly. Cook 2–3 minutes per side until golden and crisp.
  4. Serve: Drain on paper towels. Serve warm with sour cream, yogurt dip, or a drizzle of hot honey.
