A small skillet of sunshine—these crispy fritters are packed with garden-fresh flavor!
Ingredients
- 1 medium crookneck squash, grated
- 1/4 tsp salt
- Pinch of black pepper
- 2 tbsp chopped onion
- 1/2 tbsp chopped fresh basil or parsley
- 1 egg
- 2 tbsp flour
- 2 tbsp cornmeal
- 2 tbsp grated Parmesan (optional)
- Olive oil or butter for frying
Instructions
- Prep the squash: Grate squash and place in a colander. Sprinkle with salt and let sit for 10 minutes. Squeeze out excess moisture.
- Mix the batter: In a bowl, combine squash, pepper, scallions, herbs, egg, flour, cornmeal, and Parmesan.
- Fry: Heat oil or butter in a skillet over medium heat. Drop spoonfuls of batter into the pan and flatten slightly. Cook 2–3 minutes per side until golden and crisp.
- Serve: Drain on paper towels. Serve warm with sour cream, yogurt dip, or a drizzle of hot honey.
