Farm Fresh Basil Pesto

Pesto is a versatile dish you can serve as an appetizer, or as a replacement for sauce on pasta dishes. It’s easy to work with, and is *so* delicious!

Ingredients

  • 2 cups fresh basil leaves (packed)
  • ½ cup grated Parmesan or Asiago cheese
  • ½ cup extra virgin olive oil
  • ¼ cup pine nuts (or you can use walnuts or pecans)
  • 2 garlic cloves
  • Optional: ¼ cup lemon juice for brightness
  • Salt & pepper to taste

Instructions

  1. Blanch basil for 30 seconds, then put in ice bath, then drain.
  2. Toast the nuts lightly in a dry pan for extra flavor (optional).
  3. In a food processor, pulse basil, nuts, garlic, and cheese until finely chopped.
  4. With the processor running, slowly drizzle in olive oil until smooth.
  5. Add lemon juice, salt, and pepper to taste.
  6. Store in an airtight container in the fridge for up to a week, or freeze in ice cube trays for easy portions when it’s cold outside!
