Pesto is a versatile dish you can serve as an appetizer, or as a replacement for sauce on pasta dishes. It’s easy to work with, and is *so* delicious!
Ingredients
- 2 cups fresh basil leaves (packed)
- ½ cup grated Parmesan or Asiago cheese
- ½ cup extra virgin olive oil
- ¼ cup pine nuts (or you can use walnuts or pecans)
- 2 garlic cloves
- Optional: ¼ cup lemon juice for brightness
- Salt & pepper to taste
Instructions
- Blanch basil for 30 seconds, then put in ice bath, then drain.
- Toast the nuts lightly in a dry pan for extra flavor (optional).
- In a food processor, pulse basil, nuts, garlic, and cheese until finely chopped.
- With the processor running, slowly drizzle in olive oil until smooth.
- Add lemon juice, salt, and pepper to taste.
- Store in an airtight container in the fridge for up to a week, or freeze in ice cube trays for easy portions when it’s cold outside!
